Bread Men and Women


Gingerbread Men (And Women) Cookies



MAKES 1 TRAY
For the dough: 5¼ oz (150 g) low-fat quark, 6 tbsp milk, 6 tbsp neutral cooking oil, ⅓ cup
+ 2 tsp (75 g) sugar, 2 tsp (8 g) vanilla sugar, 1 pinch salt, 2⅓ cup + 1 tbsp (300 g) flour, 1
tbsp (10 g) baking powder
For garnishing: raisins
Additional: parchment paper, egg yolk to brush onto the dough
Remove excess liquid from the low-fat quark using a paper towel. Then, mix the quark,
milk, oil, sugar, vanilla sugar, and salt in a bowl. Sift the flour into a second bowl and mix
with baking soda. Add half of the flour mixture, 1 tbsp at a time, to the quark mixture, and
mix it in. Then knead in the rest of the flour mixture with your hands.
Preheat the oven to 355°F (180°C), unless you have a convection oven, in which case
preheat to 320°F (160°C), or a gas oven, in which case preheat to level 3. Line a baking
sheet with parchment paper, cut to size.
Out of the dough, make balls for the heads, long cylinders for the arms and legs, as well as
a body and garments for the bread men and women. They should be about 8 in. (20 cm)
tall. For the eyes and the mouths, press raisins into the faces of the dough people. Brush
the bread men and women with beaten egg yolk.
Place the bread men and women onto a baking sheet, making sure to leave enough space
for the bread to expand a little bit. Put the baking sheet on the middle rack of the
preheated oven and bake for 30 minutes, until golden brown.
Allow the baking sheet to cool for 5–10 minutes after it has been removed from the oven.
Only then should the bread be removed from the baking sheets with a spatula and placed
onto a wire rack to cool. This bread is best enjoyed not long after baking.
