MAKES 1 TRAY
For the houses: 12 rectangular shortbread biscuits (approximately 2⅓ in. x 2 in. [6 cm x 5 cm], ready-made product).
For the garnish: 4 egg whites, 1 pinch salt, ½ cup + 2 tbsp (125 g) sugar, ½ cup + ⅓ cup (100 g) powdered sugar, ½ oz (15 g) starch, 10½ oz (300 g) marshmallows, a few mini-marshmallows, miniature rectangular chocolate cookies, bright mini sugar pearls.
Additional: parchment paper, wax paper.

The gingerbread houses need one night to dry. On the day of preparation, use a hand mixer with a whisk attachment to beat the egg whites and salt in a bowl until creamy, while gradually sprinkling in sugar. Keep mixing until the crystals have dissolved. This mixture will be used as snow decoration. In another bowl, mix powdered sugar and starch, sift it over the egg white mixture and fold in gently.

Make a piping bag out of parchment paper, fill it with the glaze, and cut a small hole in the tip. Use the icing to glue 2 marshmallows on top of each other, and the marshmallows onto the middle of 4 cookies. Cover the top of the higher marshmallows with the egg white mixture.

Glue 2 cookies together on the long sides using the egg white mixture to form a pointed roof. Glue this onto the top marshmallow. Hold the roof together with your hands until the house can stand on its own. Use this process to build three more mini cookie houses. Line a baking sheet with parchment paper, cut to size, place the cookie houses on it, and let dry overnight at room temperature. Cover the rest of the egg white mixture and place it in the refrigerator.

The next day, make a second piping bag out of half a sheet of wax paper, fill it with the egg the white mixture, and cut a small hole in the top of the bag.

Decorate the house roofs with snow (the egg white mixture), mini chocolate cookies, sugar pearls, etc. Make fences out of mini-marshmallows or fruit gummies (see photo). Finally, use the egg white mixture to stick a small, rectangular cookie on the roof as a chimney.
